Instant Pot Hot-Turkey Chili

K guys. I will do it. You want recipes, man I have recipes. Don’t want em, skip this post–I will be reorganizing this whole site design shortly–But below, behold.

I bought the 8 quart, not because we expected to grow our family or anything, but because sometimes making in quantity is legit, as is being able to make a meal for your guests. Granted, guests are not very these days and that is okay—I can make all the good food for us both and make the neighbors jealous this is the house with all the smells wafting out the door, which it kinda is anymore. I told Don months ago that if he was going to start working absurd hours I would make sure he was well fed, and his food would not be boring. He would be able to make others jealous, lean cuisine not unlikely for people keeping non cooking hours. He thought it was funny and cute until I started busting out the best recipes. During my 45 minute lunch I whipped up a pot of turkey chili since it was $2.99/lb this weekend. Again, no recipes followed EXACTLY, but this is my current incarnation I am munching on with half an avocado right now.

1 medium onion, chopped
3-4 cloves garlic minced
1/2 poblano pepper cut in squares
1/2 red pepper cut in squares
1/2 jalapeno, seeded and sliced thin
1 lb ground turkey
1 sweet potato in 1 inch cubes or so
1 can chickpeas
1 28 oz can crushed tomatoes
1 C chicken broth
1 tsp cumin
1 tsp smoked paprika
1/2 tsp chili powder

pinch of cinnamon

Saute onion in instant pot until slightly translucent, 4 minutes or so
Add in garlic, stir, season both with salt and pepper
Add in turkey, cooking until no longer pink
Pour in tomato sauce, beans and 3/4 of the peppers
Measure spices, add chicken broth and sweet potato and stir.

Pressure cook 9 minutes, natural release and stir in remaining peppers for crunch. Natural release you just pop it slightly over to venting or you could just leave it in there until the red button goes down naturally. As far as I can taste, nothing would go badly with either method.

Add cheese and all the good stuff, and voila.

This is his first meal I have made today but Blue Apron came today as well which means Chicken Curry is for dinner and Chili is his lunch and maybe mine tomorrow too. Either way, that is life with an instant pot a a service sending you only exactly what you need to eat
